Caesar Salad Dressing

Ingredients

2 egg yolks
3 cloves of garlic microplaned
1 lemon juiced
1 TBSP Dijon mustard
1 TSP Worcestershire
3-6 anchovies
1 cup EVOO
1 TBSP red wine vinegar
Salt & pepper
Parmesan cheese
Romaine
Garlic croutons

Instructions

1. Combine garlic, anchovies, dijon, lemon juice, egg, Worcestershire, salt & pepper in a bowl. Whisk together
2. Slowly stream in olive oil to create an emulsion. Add red wine vinegar and grated parmesan cheese. Taste and adjust seasoning as necessary
3. Rinse romaine. Toss with dressing, croutons and parmesan cheese until evenly coated. Finish with grated parmesan
