Capon's Bacon Jam


15 oz diced spanish onion
2 lbs bacon cooked until crispy, diced fine
5 grams ground black pepper
1/2g red pepper flakes
25g brown sugar
30g red wine vinegar
10g worstechire
10g water


1) Cook the bacon until crispy. Caramelize onions in rendered bacon fat in a pan for about 10-15 mins until golden brown
2) Add bacon followed by brown sugar and caramelize for a few minutes. Add the rest of the ingredients. Cook until there’s very little moisture
3) Add touch of salt, remove from heat. Store in fridge
