HOMEMADE ROASTED TOMATOES

Ingredients

10-12 pump tomatoes
6-8 garlic cloves minced
1 tablespoon fresh thyme
Pinch of chilli pepper flakes
1 teaspoon dry oregano
1 tablespoon kosher salt
Black pepper
¼ cup EVOO
2 tablespoons red wine vinegar
Fresh basil

Instructions

1. Slice tomatoes in half lengthwise
2. Mix all ingredients
3. Add Tomatoes and mix
4. Place tomatoes on a sheet pan flesh side up
5. Pour remaining marinade over tomatoes with salt
6. Sprinkle with salt place in a 250 degree oven for approximately 2-3 hours
7. Put the tomatoes in a container and cover with EVOO and fresh basil
