Grilled Shrimp White Bean Salad


2 cans cannellini beans, rinsed
1 cup diced carrots
1 cup diced celery
1 cup diced red onion
1 cup basil chiffonade
1 pint cherry tomatoes, halved
½ cup red wine or sherry vinegar
½ cup EVOO
1 TBSP red finger chiles minced
1 lb shrimp peeled & deveined
1 TSP Calabrian chile paste
1 lemon zested and juiced
1 lemon grilled for garnish


1. Marinate the shrimp with Calabrian chile paste, lemon zest & juice and EVOO
2. Dice all of the vegetables, season with vinegar, EVOO, salt & pepper and basil
3. Season shrimp with S&P and grill for a few minutes on each side
4. Mix half of the shrimp with white bean salad, place a shrimp skewer on top. Garnish with grilled lemons
