Sausage Stuffed Zucchini


3 pieces zucchini
1 lb sausage
1 cup parmesan cheese
1/2 cup breadcrumbs
1/2 cup chopped fresh basil
2 cups sliced peppers
1 red onion
5 cloves garlic
2 cups tomato sauce
Fresh basil to finish the sauce
Pinch of chili pepper flakes


1. Preheat oven to 450 degrees
2. Scoop out zucchini with a melon baller. Season with EVOO and salt & pepper
3. Mix sausage with breadcrumbs, parmesan cheese, salt & pepper and fresh herbs
4. Fill up zucchini boats, bake in oven until golden brown
5. Saute garlic and red onion in EVOO, add peppers, add tomato sauce, chili pepper flakes, season with salt & pepper and simmer. Finish with fresh basil, remove from heat
6. Serve the zucchini boats over a bed of the peppers. Finish with shaved parmesan cheese
