SHRIMP, CHORIZO AND POTATOES

Ingredients

1 pound shrimp peeled and deveined
1 cup chorizo sliced
2 cups fingerling potatoes sliced into coins
6 cloves of garlic
½ cup chopped parsley
1 red onion julienned
4 tablespoons sherry vinegar
Pinch of chili pepper flake
4 tablespoons
EVOO
Bread

Instructions

1. In a cast iron pan render the chorizo until crispy
2. Add EVOO and shaved garlic
3. Cook for 2-3 minutes until the garlic is lightly golden brown
4. Add red onions
5. Cook for about 3 minutes until tender
6. Season the shrimp with salt and pepper and add to pan
7. Cook for another 3 minutes
8. Add the potatoes
9. Season with salt and pepper
10. Deglaze the sherry vinegar
11. Finish with chopped parsley
12. Serve with warm bread and enjoy!
