STEAK TARTARE CROSTINI

Ingredients

1 lb Filet Mignon finely chopped by hand
1 Egg Yolk 1 TBSP Capers, finely chopped
1 TBSP Cornichons, finely chopped
1 TSP Dijon Mustard
1 TSP Grain Mustard
1 TSP Lemon Juice
2 TBSP EVOO
2 TBSP Parsley, finely chopped
2 Shallots, minced
A Few Dashes Tabasco
A Few Dashes Worcestershire Sauce
Salt & Pepper to taste

Crostini:
Crusty Italian or Ciabatta Bread
Salt & Pepper
Handful of Arugula
Drizzle of Olive oil
Touch of Lemon Juice
Salt & Pepper

Instructions

1. Place all tartare ingredients in a large bowl and mix with a fork until combined.
2. Slice bread into medium sized slices, Season with EVOO and S&P and place on baking sheet
3. Bake in oven or toaster oven until golden brown
4. Cover crostini with steak tartare
5. Mix arugula, lemon juice, olive oil, salt & pepper in a bowl, place a small amount on top in the middle of the tartare crostini.
6. Garnish with Cornichons and lemon
Serve and Enjoy!!
