STUFFED OYSTER (CRAB, SPINACH, ARTICHOKE)

Ingredients

1 dozen large east coast oysters
2 cups creamed spinach (see baked spinach recipe)
1 pound crab
1 cup Parmesan cheese
1 cup chopped marinated artichokes
1 cup panko
Salt and pepper
Olive oil
Zest and juice of 1 lemon
1 pinch of cayenne pepper
½ cup parsley

Instructions

1. Add 1 pound of crab, 1 cup chopped marinated artichokes, 2 cups creamed spinach, 1 cup panko bread crumbs, 1 cup parmesan cheese, the zest and juice of 1 lemon in a mixing bowl
2. Mix well and add a pinch of cayenne pepper and salt to season
3. Shuck the oysters and make sure they are clean
4. Make salt piles on a baking sheet to stabilize the oysters
5. Place the oysters on the mounds of salt on the baking sheet
6. Top each oyster with a tablespoon of the crab and artichoke mixture and sprinkle a little Parmesan cheese on top
7. Place the stuffed oysters under a broiler until golden brown
8. Place on a bed of parsley and garnish with half lemon Serve immediately and enjoy!!
